mackerel lattume is a typical fish product used as an ingredient in sicilian cooking, it is the male equivalent of bottargo. It is obtained from the gonads and it is necessary to catch male fish during the breeding season. The bags of the seminal fluid must be as full as possible; they are taken, cleaned, boiled in water and salt and then cooled. At this point the lattume is drained and stored in glass jars with olive oil. Its natural and genuine flavor gives your dishes a Mediterranean touch.
