A processing carried out according to the true artisan method, genuine ingredients and a pasta factory with a quality control that comes from the expert hands of those who have been making pasta for generations. Only the finest durum wheat semolina and cold-kneaded water. The pasta is bronze drawn, at low temperature and controlled humidity: between ten and fifteen hours, depending on the shape and size.
The Maestri Pastai Trofie have a unique and authentic flavor, produced with 100% Italian wheat. Pure water from Matese is the second natural ingredient, and is known for its lightness. Kneading, slow and delicate, ensures us the excellent mix of ingredients. The pasta is dried at very low temperatures, which normally do not exceed 38 ° C for a period of about three days, in order to keep all the organoleptic characteristics intact and have good cooking tenacity.
